Apple Cinnamon Pancakes

Ingredients

For the pancakes

  • 1/4 cup Coconut Flour 
  • 3 tbsp aquafaba
  • 2 tbsp olive oil
  • 2 tbsp honey 
  • 1 tsp baking powder 
  • 1 tsp vanilla essence
  • Salt

For the apple topping

  • 1 apple peeled and diced
  • 1/4 tsp cinnamon 
  • 1 tbsp butter
  • 1 tbsp Cane Jaggery Powder
  • 2 1/2 tbsp honey
Method

1. Sift coconut flour into a large bowl. Add aquafaba, oil, honey, baking powder, vanilla essence and salt to taste. Whisk all the ingredients together.

2. Heat a greased skillet over medium-low heat. Add 3 tablespoons of pancake batter and allow it to cook till you see air bubbles in the middle of the pancake. Flip the pancake and let it cook for 4 minutes. Repeat with the rest of the batter.

3. For the apple topping, heat a pan over a medium-low flame. Add butter, apples, cane jaggery and cinnamon. Stir for 3-5 minutes or until the apples become tender. Stir in the honey. 

4. Pour the apple topping over the warm pancakes.
