Green Thai Curry

Ingredients
For Thai green paste
- 1/2 inch galangal
- 1 inch lemongrass stem
- 1/2 onion
- 4–5 garlic cloves
- 1/3 cup coriander leaves with stem
- 3 green chillies
- 2–3 Kafir lime leaves
- Basil leaves
- Salt to taste
For Thai curry
- 1 tbsp oil
- 2 tbsp Thai green paste
- 4 button mushrooms
- 1 red, yellow and green capsicums
- 6 baby corns
- 1/4 cup broccoli
- 1/4 cup zucchini
- 1/4 cup Thai brinjal
- 1 cup coconut milk
- 3 cups water or vegetable stock
- 1/2 tsp sugar
- Salt to taste
Method
1. Blend all the ingredients of the Thai green paste in a grinder.
2. To make coconut milk, mix 4 tablespoons of Coconut Milk Powder with 200 ml of lukewarm water.
3. In a large pot, heat 2 tablespoons of oil. Add the Thai green paste and stir continuously till the oil separates (around 5 minutes).
4. Add the coconut milk to the pot and mix well.
5. Stir in the water and sugar.
6. Add the chopped vegetables.
7. Add salt to taste and cook for 2 to 3 minutes.
8. Garnish with basil and a wedge of lime.
